On a weight basis, brazzein is 2000 times sweeter than sucrose, compared to sucrose and its sweet perception is more similar to sucrose than than other sweeteners such as stevia, thaumatin, or aspartame.  Brazzein is stable over a broad pH range and is heat stable at 98°C for several hours.
